Hands on Professional Culinary Arts
Workshop for School Cooks

At: Green Mt. Union High
On February 26th


Green Mt High Food Services hosted a regional Culinary workshop for cooks from area Schools. The workshop was taught by New England Culinary Institute Team of Chefs and Jack Carroll Director of Food Services. There were 20 attendees from area schools in attendance. The name of the workshop was Fresh Foods Galore. The three hour workshop was spent working with a variety of foods you can use across the seasons. The hands on workshop covered the many ways of preparing fresh vegetables in order to make our menus more interesting. The group worked on many types of cooking techniques that work best for different types of vegetables and explored professional preparation and serving of cooked and raw vegetables.

This was the first of many of theses workshops taking place throughout the State brought to us by New England CulinaryInstitute and The School Nutrition Association 
of Vermont.
